Truffle Hunting with a Trifolao
Two and a half hours in the woods with the hunter and his dog, then the tasting
Highlights
- A real trifolao and his dog, on a private truffle ground
- Small group hunting: six people at most, never a coach
- You taste what was found, back at the farmhouse
- White truffle from 1 October to 31 January, black truffle the rest of the year
- Pickup and drop-off at your address in the Langhe
- Dawn or afternoon departures, when the dog works best
About this tour
This is not a performance. The hunters we work with search for a living and take you where they would be searching anyway, so some days the wood gives little and some days it gives well. Afterwards you go back to the farmhouse, brush what came out of the ground and taste it on an egg or a plate of tajarin, with a glass of Nebbiolo.
From 1 October to 31 January the hunt is for the white truffle of Alba, the one the Fair is built on. The rest of the year it is the black truffle, which is every bit as real and costs far less: same outing, same dog, different season.
Itinerary
-
Pickup and drive to the truffle ground 25 min
We collect you where you are staying and drive up towards the wood. Twenty to thirty minutes depending on where the hunt is that day.
-
Meeting the trifolao 15 min
The hunter explains how it works: where a truffle grows, why in certain rows and not others, how the dog was trained. A few words, then into the wood.
-
The hunt 1h
You walk behind the dog for a good hour, on uneven ground and often uphill. When the dog marks, the hunter digs with the spade and the truffle comes out in front of you.
-
Cleaning and tasting 40 min
Back at the farmhouse what was found is brushed, weighed and tasted: egg or tajarin, a glass of Nebbiolo, and an explanation of how to keep a truffle that has to last a week.
-
Drive back 25 min
We take you back to where you are staying. If you bought truffle it travels with you, sealed and weighed by the hunter.

Good to know
- Wear closed shoes you do not mind ruining: the wood is steep and almost always wet.
- Nobody can guarantee a truffle will be found. This is a real hunt, not a show with a truffle buried beforehand.
- White Alba truffle is hunted from 1 October to 31 January, the dates are set by the Piedmont region and in September harvesting is banned for every species; the rest of the year the hunt is for black truffle.
- The dogs are used to people, but tell us when you book if anyone is afraid of dogs.
- Suitable for children from about six, as long as they can walk an hour in the wood.
- Paid on the day, in cash, directly to the driver.

Frequently asked questions
Do you always find a truffle?
Almost always, but no serious hunter will promise it. The dog is really searching and some days the wood gives nothing. The tasting happens either way, with truffle from the farmhouse.
When is the best time?
October and November for the white Alba truffle: that is when the wood smells of it and the Fair is open. Black truffle is hunted from spring to late summer and makes an equally good outing, with fewer people around.
Can I buy the truffle that is found?
Yes. The hunter weighs it in front of you and sells it at the price of the day, which moves every week with the rain and the Alba market.
How much walking is there?
About an hour, on sloping and often muddy woodland paths. You do not need to be fit, you need the right shoes.
What time do we go?
Early morning or afternoon: those are the hours when the dog works best and the wood is damp. We confirm the exact time once the hunter is booked.
